Chicken and Avocado salad

Fantastic healthy, filling and oh so good for you alternative to your usual cheese sarnie!!!

Chicken and Avocado Salad

Ingredients: cooked roast chicken cut into strips

                     Half a cucumber, sliced

                    Avocado, cut into chunks

                    Apple, grated

                    100g watercress and spinach salad

                    3-4 tbsp greek yogurt

                    Tbsp Extra virgin olive oil

                    Juice of half a lemon

1.     Toss the chicken, avocado and apple with the yogurt

2.     In a separate bowl toss the salad leaves with the olive oil and lemon juice,

3.      Combine and serve.

4.     ENJOY!!
