Fantastic carrot and lentil soup recipe!

Just a quick blog to share with you my discovery of this fantastic recipe from the Good Food website.  It is easy and quick and so incredibly tasty and filling.  Double up the amounts and freeze so that you always have some on standby.  240 calories a serving! High in fibre, low in fat, high in protein and so very good for you!

I have been eating this for lunch most days this week and can honestly say it has filled me up and kept me full till teatime.  (My two year old always asks for second helpings!)  Get cooking!

Spiced Carrot and Lentil Soup

2tsp cumin seeds
pinch chilli flakes
2 tbsp olive oil
600g carots, washed and coarsely chopped
140g split red lentils
1l veg stock (stock cube is okay)
125ml milk

1. dry fry the cumin seeds and chilli flakes for one minute.  take out half of seeds.  Add the oil, carrots and lentils to pan and gently fry for a couple of minutes.  Add the stock and milk and simmer for about 20 minutes.
2.  Whizz in a blender until smooth. return to the pan and reheat, season to taste. Serve with wholemeal bread.

  1. Can you use Semi or skimmed milk instead? Would it just affect the consistency?

  2. any type of milk will be fine. the soup is very thick anyway so not particularly affected by the milk. Enjoy!
